Shalane Flanagan Run Fast Cook Fast Eat Slow Giveaway + Home Cooked Meal & Wine + ARP

Hiya and Happy Tuesday!

Day Started out with the first 5 hour energy I’ve had in months, and let me tell you… no one could get a word in edge wise until at least 11:30am 🙂 I did get quite a bit accomplished, so no apologies on this end!

To be completely frank, I can whip around campus just as well or better than the normal two legged folk 🙂 Just sayin’ Okay, I’m telling myself that to make me feel better.

Has anyone heard of ARP? It’s a Neuro Sports Performance & Rehab that is only at a few select locations and San Antonio has a few of them. It assists in muscle performance and memory, injury recovery etc… I’m so excited to try this and I made an appointment after hearing about it while I was at the chiropractor yesterday. I’ll let you know how it goes on Monday, but truly hoping this helps my ankle and I can dive in deeper for sports performance. I couldn’t be more excited!

Right now, I’m actually okay with da boot, as it’s making my ankle feel better. However, I have what almost seems like a pinched nerve on the ankle itself as I step, and I will bring that up at my next appointment on Thursday. If it wasn’t for that, it wouldn’t feel half as bad as it did.

I’m still very hopeful for Houston, but I have to be honest with myself, big picture, two half marathons at risk in February.. and the fact that Houston is a full marathon! Next week at this time I think I’ll be leaning more one way or the other, but for right now I’m staying optomistic so I’m not really sad. Plus, I was to wear the prettiest ugly Christmas Sweater Shoes ever!

I saw this today and it made me laugh… how many of these can you say are something you’ve said or thought before? Me… every single one! LOL! We runners ARE a strange bunch, and I wouldn’t have it any other way!

I saw what the medals will look like for the New Orleans Rock n’ Roll Half Marathon and I can’t wait to put that around my neck and feel proud! Hoping to run faster than the Rock n’ Roll San Antonio, but I’ll still be recovering from injury and hopefully the Houston full . I’m going to be as smart about it all as possible though, I’ve already promised myself and been given the death stare by my wonderful fiance. Cough cough. She’s just looking out for me! Anyone else out there running? Would love to see you at the start or finish line. We have a gaggle of about 10 of us going, will be a total blast!

I have some super exciting news, so stay tuned for details in the next few weeks! I received 3 copies of Shalane Flanagan’s new cookbook Run Fast Cook Fast Eat Slow from her publisher. All 3 will be giveaways on this blog and/or my instagram so make sure to check back daily and follow both pages.

I’ll post something fun with them during the Houston Marathon weekend or before explaining the giveaway – Hey, it’s only natural to promote them in Houston as well being that she won the Olympic trials there several years ago while I lived in that awesome city!

This is an incredible cookbook with some mouth watering recipes and so many pictures and tons of information about food and Shalane along with Elyse Kopeky. Trust me, you want this book and it’s super thick so you’ll have recipes for days! For more information or to purchase outright click the following link:

However, don’t forget to keep an eye out for the giveaways coming soon. I’ll be posting teasers, etc…

After I got over my excitement of receiving the books, I settled into cooking dinner. We popped a bottle of wine, and I made baked lemon pepper tilapia, roasted eggplant (seasoned with a bit of honey, garlic and soy sauce) and a crunchy salad with spinach and kale as the base. I was in the mood for my mountain of greens so I made a bigger portion.

Lynn and I had some Twang pickle salt leftover from the finish line of the San Antonio RnR and we added to a few slices of cucumber with onion. It was pretty freaking good, LOL!

I cut up the eggplant, threw the tilapia in the oven and we chatted over a glass of wine. Was a lot of fun catching up on our day while spending time in the kitchen together creating a healthy dinner!

We used our wine glasses from New Year’s Eve at Barons Creek.. a nice little reminder of our wonderful holiday. I can’t wait to go back to our wedding venue and create more memories before and during the day I marry my best friend!

– Would you love to win one of the cookbooks?

I’d love to win a cookbook. My favorite wine depends on my mood. I love a good nutty Chardonnay, but a Pinot Grigio is a great red!
My favorite dish to cook is probably salmon because it’s my favorite to eat!
